No-Bake Date & Rice Cakes Balls

Ingredients
- 1 cup dates (pitted)
- 1/2 cup nuts of choice (almonds, walnuts, etc.)
- 1 tbsp butter (or coconut oil for a vegan option)
- 1 tbsp peanut butter
- 1 tbsp nut syrup (or honey/maple syrup)
- 1/2 cup shredded coconut
- 1/2 tsp cinnamon
- 2 rice cakes, crunched
- 1 tbsp cocoa
*For a smoother taste you can add some drops of milk, I did it 🙂
Instructions
- In a food processor, blend the dates, nuts, butter, peanut butter, and nut syrup until combined into a sticky dough.
- Add the shredded coconut, cinnamon, and crunched rice cakes to the mixture, and pulse a few times to incorporate.
- Scoop out small portions and roll them into balls using your hands.
- Roll each ball in shredded coconut for a finishing touch.
- Place the balls on a tray lined with parchment paper and refrigerate for 20–30 minutes until firm.
